10 8 can taco soup




remember how i said, we've eaten like chubby 10-yr-olds for a while at our house?
well, we have.

we both have gained more than necessary in the first trimester of this bean growth
party and it had to stop... er, slow down.

so, this week we are on a cleanse. we've both lost 2 lbs already,
{proof that i have gained mostly fat so far...oops.}

the funny thing is, i am eating the way i should be while pregnant anyway...
lots of fruits, veggies, water, grains... i am actually too full to eat everything on the menu usually.

and at the end of the day, i still crave something warm and home-y.
when i'm pregnant, apparently,
all i want in the world is comfort-type food products.

so, this was one we had last week and loved it.
and it's comfort food with lots of flavor, but not too fatty and sodium-y.
so it feels great going down.

makes up quite a bit, so we had it for a few days and it made me oh so happy...
i might have to make it again next week when, ya know, i can eat {cough} real food again.

Easy 8 Can Taco Soup

1- 15 oz can pinto beans
1- 15 oz can white beans
1 - 15 oz can kidney beans
1- 7oz can Niblet corn
1- 28 oz can diced tomatoes
1- 4oz can of diced green chilies
1 envelope taco seasoning
1 envelope hidden valley ranch dressing mix
1 lb shredded chicken (can use two cans of Costco Chicken)

What to do:

throw it all in a crockpot (i left most of the liquids in, but drained some of the bean juice). stir it up and cook on high for 3 hours at least. serve with cornbread and condiments of your choice: fritos, shredded cheese, sour cream, avocado, salsa, onion, you get idea!
  stupid easy, and perfect for these wanna be cold days here in San Diego we've been having.

  5. It looks and sounds awesome but I have a question: I'm in Canada and after searching through 4 grocery stores I still can't find the envelope hidden valley ranch dressing mix :( Is there a substitution you would suggest? Or am I looking in the wrong place?

    1. Ooh, I'm not sure about that. It did take me a while to find at first. It can be by the dressings, where the gravy mixes are...etc. but I will have to see if there is a good replacement...
